Aquaculture is a modern industry with stringent procedures to ensure a top quality product
for the consumer

During the production cycle farmers try to avoid disturbing the fish, and only do so when it is absolutely necessary e.g. health protection. Fish are graded according to size within the cages, so as to keep fish with similar growth rate capacities and food requirements schooling together. During the 18-month growing period of sea bass and sea bream, this procedure may take place once or twice. However disturbance caused by cleaning the nets (fish are very keen on a clean environment) takes place regularly, especially in the summer, though in such a way as to cause minimal disturbance to the fish.

Fish harvesting takes place when fish reach the requested commercial size, and in such a way that safeguards fish welfare, safety, hygiene and quality. Packaging of fish for consumption is a critical process, which involves ensuring that the quality of the fish will be retained right through to its appearance on the table of the consumer.
