Cod curry with vegetables

 Ingredients :

 2 limes
 4 cloves of garlic
 salt & pepper
 0,5 teaspoon ground ginger
 4 tomatoes
 2 tablespoon coriander
 1 tablespoon parsley (chopped)
 2 tablespoon curry powder
 4 cod fillets
 2 aubergines
 2 onions
 1 thyme
 4 tablespoon peanut oil

 Instructions :

  Cut the summit of tomatoes in cross.
Then scald them 1 minute, pass them under a jet of cold water.
This done, peel them, cut them in segments, deseed and cut the flesh in dices.
peel and clean the aubergines, cut them in segments and then in dices.
Peel and chop onions and the cloves of garlic.
In a pressure cooker, make gild the darnes of fish in hot oil 2 minutes per face and on very warm heating.
Remove them delicately and and keep them in warmth.
Then, in the same pressure cooker, mix the minced meat of onions and garlic sprinkled with the ginger during 5 minutes on average fire.
Add tomatoes, aubergines, thyme and parsley. Salt and pepper.
Let cook up 5 minutes.
Powder all with curry and mix before plunging the cod darnes there. Bury them slightly in the mixture.
Cover and let cook 25 minutes on slow fire.
Press 1 lime. Wash the other one then cut it in very fine slices.
The cooking ended, draw up the darnes on a warm service dish, cover them with sauce and spray them with some lime juice.
Garnish the dish with slices of lemons and strands of coriander.
Serve warm.
