Baked trout with mushrooms
( Recipe by club house of Mount Massive lakes Inc. )

 Ingredients :

 1/2 cup of butter
 1 lb fresh mushrooms thinly sliced
 0,75 cup thinly sliced green onions
 0,5 cup fresh bread crumbs
 1 teaspoon lemon juice
 salt & pepper
 4 trout (cleaned)
 flour
 2 tablespoon olive oil

 Instructions :

 
Season trout lightly with salt and pepper.
Roll in flour and brush of excess.
In heavy skillet melt 2 tbsp. butter with olive oil over high heat.
When foam subsides, add trout and 4 to 5 minutes on each side or until golden brown.
Carefully transfer trout to a plate or platter.
In a stainless steel or enameled skillet, melt about 4 tbsp.butter over moderate heat.
Add mushrooms, sprinkle with lemon juice and cook about 3 minutes until slightly soft, stirring constantly with a wooden spoon.
Remove mushrooms to a buttered 9” . 13” baking dish.
Melt 1 tbsp. butter in skillet and add the green onions.
Place trout on mushrooms, then top with green onions and bread crumbs.
Bake 425 degrees 10 minutes or until trout is white and flakes.
Serves 4.
