Preparing Fish

Preparing fish is not always seen as a pleasurable thing to do and many fishmongers will do the tasks described below for you. However, nothing beats fresh fish and it is not always possible to have the fish prepared in advance. So here are some tips on what to do in order to start the preparation of a nutritious and enjoyable meal.

Whole Fish: 

  1. Gut the fish if not already done so. 
  2. Remove gills, using  kitchen scissors for convenience. 
  3. Wash well in cold water, paying special attention to cleaning the visceral cavity area.
  4. Wipe away the dark membrane of the stomach lining and remove the vein of blood from along the back bone. 

Cutlets or Steaks: 

  1. Remove all blood from along the back bone
  2. Wash well in cold water. 

Fillets of Fish: 

  1. Remove skin if necessary. 
  2. Remove small 'V' shaped piece at the top of the fillet. This piece contains the pin bones. 
  3. Rinse quickly in cold water and pat dry at once.
