Buying Fish

Always ask your fish retailer for advice on what fish is plentiful and good value  for money.  Remember fish is a very versatile food and one variety can easily be substituted for  another in a recipe. 

How to choose  whole fish?

 When choosing whole fish, look for the following: 

  • Eyes:   Bright. shiny and prominent 
  • Gills:  Bright red/pink in colour with no odour 
  • Skin:   Bright sheen, smooth to touch 
  • Odour:  Clean fresh 'seaweedy' odour. 
  • Remember: fresh fish does NOT smell “fishy”

How to choose fillets?

When buying fillets of fish check for a clean fresh odour. Fillets should be translucent  rather than opaque. The edges should not be dried up or have yellow/reddish  discolouration. Fillets should be close textured and the skin should have a bright sheen.
